WARM CHIA PUDDING

A cosy, protein-rich chia pudding served warm. Perfect for cooler mornings during winter and when you're in the mood for something comforting.

Chia seeds are a great source of omega-3s, soluble fibre and minerals, and the added protein powder and Greek yoghurt make this genuinely sustaining. Serving it warm makes it gentler on digestion and more nourishing in the colder months.

Ingredients

1 scoop of vanilla protein powder

1.5 cups of milk of choice (add more as needed)

4 tbsp chia seeds

½ tbsp maple syrup or organic honey

¼ tsp vanilla essence

½ cup unsweetened Greek yoghurt

Optional toppings: fresh berries, granola, nut butter, stewed pears

Method

Gently warm the milk in a small saucepan over low heat: warm, not boiling.

Whisk in the protein powder, maple syrup, and vanilla until smooth.

Stir in the chia seeds and let sit for 5–10 minutes, stirring occasionally, until thickened. Add more milk if needed.

Spoon into a bowl, swirl through the Greek yoghurt, and finish with your toppings of choice.

Tips

Stewed pears with cinnamon are my choice of topping here, but you might also like to make a berry coulis, or just top with banana and nuts if you're short on time.

If the pudding thickens too much as it sits, loosen it with a bit more warm milk.
